Roasted Tomato, Basil & ParmesanThis recipe needs almost no work but takes a little preparation time. It’s so tasty it’s worth the time it takes to make. I made this with the tomatoes and basil that have been growing in my garden all summer, if you haven’t been slaving away all summer growing tomatoes & basil, shop or market bought ingredients are fine.

Ingredients
500g Tomatoes
2 Garlic cloves
Few thyme springs
2 Red Onions
50g Basil
Parmesan – Vegetarian
Aged balsamic vinegar – The best you can afford
Salt
Pepper

Oven Roasted Tomatoes
Ingredients
500g Tomatoes
2 Garlic cloves
Few thyme springs
Salt
Pepper

Method
Slice the tomatoes in half and place on a cooling rack on an oven proof dish. Slice the garlic as fine as possible and place 1 piece of garlic on each tomato half. Pick the thyme and sprinkle over the tomatoes along with the salt and pepper. Bake in an oven at 150c until dried out (about an hour).

To finish off the salad
Either dice or slice the red onions, place on top of the tomatoes, pour over balsamic vinegar, picked basil & peeled parmesan.
